Ingredients
- 220ml KUKU Plain Milk Kefir (chilled)
- 60g mango puree (Alphonso or Banganapalli)
- 30ml whole milk
- 15ml blue pea flower tea concentrate (see note below)
- 1.2g ceremonial-grade matcha powder
- 1 tsp honey or organic cane syrup (optional)
- ½ tsp vanilla extract
- Pinch of sea salt
Blue pea concentrate: steep 5g dried butterfly pea flowers in 100ml hot water (90°C) for 10 minutes, then strain and cool.
Directions
- Blend: Blend the mango puree with the whole milk until completely smooth.
- Dissolve: Whisk the matcha into 20ml warm water (70–80°C) until lump-free.
- Mix: Stir the milk kefir into the mango blend.
- Layer: Pour in the cooled blue pea concentrate.
- Fold: Gently fold in the matcha mixture — don't overmix, let the colours swirl.
- Bottle & chill: Bottle immediately and refrigerate before serving.

Milk Kefir Base Recipe (For Consistency)
- 1 litre whole milk
- 20–30g active milk kefir grains
- Ferment at 22–24°C for 18–24 hours, until pH reaches about 4.4–4.6.
- Strain out the grains and chill before flavouring.
Fruit Puree Preparation
- Wash ripe fruit thoroughly.
- Peel if needed (e.g., mango).
- Blend until smooth.
- Pass through a fine sieve if you want a smoother drink.
- Pasteurise the puree at 72°C for 15 seconds, then cool quickly before mixing. This reduces unwanted microbes while preserving flavour.
Tips for Commercial Production
- Always measure pH (target below 4.2 for flavoured milk kefir).
- Keep fruit additions between 10–20% of the final volume to preserve fermentation character and stability.
- Store all finished beverages at 0–4°C.
- Conduct shelf-life testing before commercial sale, as fruit, sugar levels, and storage conditions all affect carbonation, microbial stability, and flavour over time.
